You do know that Christianity was the Roman Empire's state religion from the mid-300s AD onward? And that the Irish never quit?
And that the polytheism that was available north of the Alps after that time was the Germanic pantheon. So any follower of polytheism in, say, England would have to worship Donar, Woden, Fricco, Frigga & Freyja. There's no evidence that anybody did in the Late Middle Ages.
But lots of #folklore, yes: elfs, fairies, kelpies, boggarts.
