Today's meal!
This isn't the usual chopsuey because I used frozen mixed vegetables as the main ingredient. It's affordable, convenient, and I honestly love the corn in it. I also added some leftover meat instead of letting it go to waste because in this house, leftovers deserve a second chance. 😂 then tossed in a few extra veggies I had at home.
Of course, no veggie meal feels complete without fried fish on the side.
This is enough for our family of four—three adults and one toddler. Budget-friendly, and filling. Not bad for a simple home-cooked meal!
