Eat! The tiny 'maters will end up snacks or part of a loose sauce for a pasta. The big ones sliced for eats or into a sauce, or sandwich -- I DID actually grate one yesterday to put on crusty bread to make pan con tomate!
The peppers will go into something spicy, at least the cowhorns, because those are FIREY hot. And I dunno on the santa fe, they're a fruity-spicy one.
