I don't think molds would be that much more work, as I would just plop the hand-molded bit into the mold, after approximating the size. I'm mainly thinking that I wouldn't have to fiddle with the dipping/coating stage as much, as I did it once and found it annoying.
Is your coating just melted chocolate? I've found that to be quite easy to handle.
