Unagi Sauce Recipe (Metric):
Ingredients:
• 175g of sake
• 120ml of mirin
• 200g of white sugar
• 250ml of soy sauce
Instructions:
1. Place the sake and sugar in a saucepan and heat on medium heat until the sugar has dissolved.
2. Add the mirin and soy sauce and bring to a boil.
3. Reduce the heat and simmer for 15 minutes.
4. Remove from heat and let cool before bottling and storing in the refrigerator.
