Most camera metering is for getting the correct exposure against a neutral gray color. In a studio or planned setup in nature a neutral gray card could be used to set the metering, then take photo with those settings馃槅
Depending on the camera sometimes you can frame the wanted subject in the center (spot metering) and lock the settings. Then reframe the picture and take photo. Half push on shutter button for my capable cameras. Works for focus too.
Some cameras have special settings for "snow" or "beach" which can help...
