Not all grapes carry the same histamine load and the gap between varieties is bigger than people assume.
Thick-skinned reds like Malbec and Syrah produce more histamines during fermentation than thin-skinned ones. A big reason why histamine sensitivity hits harder in reds than whites.
That said, the histamine load matters less than your body's ability to process it.
Many winemakers overuse sulfur. They argue that people do not have negative reactions to sulfur without recognizing that sulfur decreases your body's ability to process histamines and can lead to allergic-like reactions after drinking wine.
My Estate Pinot Noir is a thin-skinned grape and I use minimal sulfur in producing it. If you get headaches from drinking red wine, this Pinot's for you.
