Again, LTSC is your best bet for a debloated 11, and then you can manually apply other patches later. It doesn't contain the AI features, hell it doesn't even contain the gaming features (which is actually a problem because the OS doesn't understand it, meaning you need to manually reinstall the services then disable them). MAS can activate them all so it's not an issue.
