You are not verifying entropy, you are generating it with dice. Strong passphrase does the same thing.
You need to make a reasonable choice of wallet even if you generate entropy with dice, there might be other bugs - how is the entropy used, how signing happens, etc. So dice is not a bypass for secure wallet choice, only for this particular case, which will most probably never happen again and now we need to look for other issues.
