If every single scientist lied, and every single mathematician was secretly concealing the truth, I could still deduce using only math that has existed for 2000 years, and instruments that people had at the time, that the earth is in fact a sphere.
Eratosthenes measured Earth's circumference in 240 BCE using two sticks and shadows. Ships disappear hull-first over the horizon. Different stars are visible at different latitudes. Lunar eclipses always show Earth's round shadow on the moon. Polaris changes elevation angle as you travel north-south. These observations are impossible on a flat plane but perfectly consistent with a sphere.
