only thing that comes to mind here is terroir of the actual ingredients having different levels of various compounds, including the yeast used to ferment. Minerality is a very faint possibility due to differing water sources/profiles.

without going too deep on those, you're not going to know which is/are used in a beer ahead of time like 99% of the time, so may as well consider that all beers have hops to a degree and some you might luckily be less allergic to than others. But it's the hop product that'll determine that.

that's not correct. Starch sources for beer that lead to fermentation/booze can be barley, corn, rice, rye, oats, etc. Grains, or just straight up sugar in some cases.
Hops are a flavouring agent over and above the sugar source, used to bitter and add aromatics. Basically any commercial beer on the market from any country has hops, with just a few types of specialty beers aside.
Hop product can be all over the place tho, and it's possible some types will be less reactive than others.

Ever edit a PDF in MacOS Preview and have it mysteriously go password protected, effectively locking you out?
It's been a bug for at least two years, and the workaround I've found is to edit the PDF in Chrome instead – which you can still do even after the MacOS password has been inflicted on it. Which I have many questions about.
PDF is the gift that keeps on giving.
