Yeah I'd say I definitely know what I'm doing. I have mom's system with a dual boot setup.
She has Windows 10 IoT Enterprise LTSC (to maximize her lifespan on Windows) and Linux Mint MATE. I made her GRUB bootloader look really pretty and she's able to pick whichever OS she wants at boot.

Honestly I really like this take, but I have to out myself as a bit of a hypocrite.
Personally I think Debian is best. But I gave my mom Mint MATE because I wanted to give her a very simple setup out of the box and it's gotta be lightweight so it'd run on an i3-4030
