Posting the recipe in case anyone wants to also make it. #grownostr #foodporn #summersaladinspring #nostrfood<br/><br/>Summer salad<br/>Dressing/marinade <br/>1/4-1/2 cup fresh squeezed lime juice<br/>2-3 tbsp fish sauce<br/>1 Jalapeño diced <br/>5-6 cloves Garlic chopped<br/>Fresh chopped cilantro (1/4 of a bunch)<br/>Fresh chopped dill (2-3 tbsp)<br/>Fresh chopped mint (2-3 tbsp)<br/><br/>Salad <br/>Cucumber<br/>Radish<br/>Cabbage<br/>1 Shallot<br/>1 bell pepper<br/>1 tomato<br/>1-2 avocados <br/>Green onion <br/>1-2 carrots sliced<br/>3 small honey Mangos or 2 large mangos chopped <br/>Fresh dill (3 tbsp or more to taste)<br/>Fresh chopped cilantro (rest of the bunch)<br/>Fresh chopped mint (1/2 cup)<br/>Toasted rice powder (sprinkled on top) <br/><br/>Meat<br/>Shrimp or fish or chicken<br/><br/>Combine all ingredients for marinade together in jar/bowl, pour enough on top of fish for marinade, put the rest in the fridge and reserve for dressing. Marinade for 1-2 hours, longer if desired. <br/><br/>In a hot pan, add some fat (butter, olive oil etc per preference) pan sear fish/chicken/shrimp until cooked (for fish or chicken try to get a nice crisp crust created), once all the meat is cooked, take the remaining marinade and deglaze the pan with it. Simmer for a couple minutes to get all the bits from the pan. Transfer to dressing container in the fridge. Let chill until ready to serve. <br/><br/>To make toasted rice powder take 1/4c rice and toast in a frying pan (dry) until rice turns a golden/toasty brown color. Grind mixture in spice grinder/coffee grinder until powdery consistency is reached. <br/><br/>Chop up all desired salad ingredients in a large bowl. Mix well. Pour on desired amount of dressing and mix again. <br/><br/>Top with toasted rice powder and serve! I feel this is very important for the evolution of the local economies. I have been noticing with some of the “friends” we have met since uprooting our lives and moving away from our known and established lives, it feels like there is a lack of connection/substance to our new relationships. Actions I have taken to alleviate these feelings have been getting involved with creating the freedom exchange and it’s funny how few of our current “friends” find ways to make excuses why they can’t make the 30+/- minute drive out “oh I’m just so busy (even though neither work a full time job)” or “if only the exchange was on Fridays since I’m traveling up there anyways it would be super convenient for me”… well this movement is not about personal convenience, it’s about connecting with the people who made a 2+ hour drive on their only day off to participate. <br/><br/><br/>Just sharing inside thoughts about what I think will create a parallel revolution. I think we need to start doing things together with the people we share the same ideologies with. I feel like there are those that “want” and those that “do”. My husband and I are taking your #grownostr challenge. On the topic of growing your own food, we live in an area of north Idaho that’s super rocky soil. We are building it up but it’s a process. Also very difficult to have livestock on the side of a mountain we live on. Soooooo to negate this problem we created a “ North Idaho Freedom Exchange” so we could connect with members of our community that produce the stuff our property cannot. Our first meeting we had over 70 people show up!!!! We traded our kimchi for bunnies and some beef tallow for moose meat! It was awesome. Next meetup is this weekend. Hoping for another good showing. Keeping it engaging by adding in a “Kids Korner” and also creating “committees” to get people within the community involved so it can keep the momentum going. Trying to walk the walk so to speak! My husband #[3]​ and I moved out here to escape the tyrannical overlords of western Washington during the super scary “pandemic” we wanted to create something while times are good to create a place where people can come and get to know each other so when/if SHTF we know who to reach out to for basic needs like local food or assistance with construction, electrical work etc. We have met so many people and have found local cattle ranchers, people who raise heritage pigs, meat birds and an abundance of chicken eggs! It’s been awesome! What inspired us was the fact that there was a huge demand out here and we stepped up to get it going.
