Cheese & fruit appetiser and then dinner of fresh (squid ink) pasta [not home made, via PennMac] in garlicy butter with sweet sweet Hokkaido scallops all the way from freezer via Costco in brown butter, with oven baked charred acorn squash.
I just had a bit of the pasta - out of the squash bowl. A+ would do again!

Ok wow, I really really enjoyed the drink last night and wondered if it really needed that specificity (Tobala #mezcal ).
So tried it - scaled down with ok commercial espadin mezcal (Gracias a dios) and it was a perfectly noce drink but otherwise non descript.
Tried again with another mezcal - bicuixe. Opening the bottle was totally different, smoky aromatic and in drink was so minerally - totally made me think I was drinking from an unglazed clay cup (as one would chai)

Oh my word! Finally trying a combination the young bloke next to me at Bijou in Mexico City* mentioned and had. I didn't try there, opting instead for a house special cocktail. Trying it now at home with mezcal I have - my private stash Tobala (the guy said #mezcal Tobala specifically) with tonic water. Just terrific!
(I haven't tried it with other mezcal to see if it's not as good)
So good now! Will be incredible in Summer!

Didn't put the fried fish into the sauce (as say shrimp might have gone) but just put the fish over the grits and the ladeled the sauce over that. Umami
Oh yeah partner steamed up some broccoli too.
And yes we all had a 2nd fillet of flounder and it was excellent (totally not sorry it wasn't shrimp with the grits)

Bit of olive oil, bit of pork fat, chopped ½ a home-smoked sausage (hey partner had thawed out a small pack), sweat onion & jalapeño, then minced 🧄, chopped 🍅, celery seed (because trinity and celery either), squeeze of tube 🍅 paste, home Cajun seasoning < cayenne+paprika+🧄&🧅 powders, blk pepper, thyme>, salt, splashes of Worcester, shrimp+chicken stock, cream and cooked a bit then a splash of TX Pete, scallion greens

But depending on what fruit/flavor it is - freeze dried may or may not be the way to incorporate the flavor.

I have a box of various mezcals I bought/imported with some friends - straight from the mezcaleros to support them early covid 2021 times. Had to supply my own bottles to transfer my shares into.

awesome. I doubt much pressure build up. That thing is quite not airtight and besides CO2 is linear, non-polar and will not heat up in microwave (just from the hot liquid underneath in this reflux situation).
Also relatedly as I demonstrate - ice doesn't heat up in a microwave oven. The hydrogen bonding in the ice crystals keep the polar H2O from oscillating (in a sense) at microwave frequency and heating up. Liquid and vapor H2O heat up of course

Had a blast talking to young teens at one of the local Boys & Girls Club houses about #science
Took along my microwave as I'm wont to for demos etc. Was meant to be an hour but ending being nearly 2. They really really really wanted me to blow something up 😅 in the microwave but were otherwise still engaged.
Another reason I love doing #K12 #Outreach is that I learn new things. Their persistence and curiosity led me to zap (empty) chips/Cheetos bag. A few quick sparks & shrunk in 8 seconds!

Tonight's most excellent #Cocktail
2 month oak aged (pre batched obviously) Mezcal Negroni
with Mezcal[95% commercial Espadin; post age 5% Tepextate added], Punt E Mes, Campari 1:1:1 (750 mL each)
Fee Aztec Chocolate bitters and Cherry bitters also added to entire mix post age, to taste.
90 mL chilled with ice and ~10 mL water added for this drink.
Deeply satisfying.

Finally used up the duck broth from a while ago - just a weak duck broth from the neck and gizzard doctored up a bit with mild dashi and shoyu. With retrieved brisket and sides - homemade languishing khakdugi and fresh made spinach & goma ae sesame dressing. Pretty hearty Sunday #Lunch

Ok pulled out some stops for this, though for a lark went with the Old Monk rum (50/50 with plantation on the ¾ oz dark; link to specs in previous 👆🏽), Hamilton zombie blend for the Smith&Cross and a robust Tobaxiche mezcal. This drink is less sweet and earthy - can't tell base spirits still nor the maple in this, but feels/tastes like I'm drinking out of a small clay cup (bhar or kulhad - like the ones for chai)

Finally got it together today - and glad I did (Thanks)!
I favor the Aztec chocolate bitters (over angostura cocoa) from my mezcal negronis. Great depth in this #Cocktail , maple peeps out at end but can't really tell the base spirits as noted.½ plantation ½ Blackwell for the black rum. Not putting these away, will definitely make another tonight! May sub bland espadin for something better from my stash

I'm not the most knowledgeable on this topic - but we got an Aventon (Sinch) last year in Nov when they were having a sale.
With this cold winter haven't used it much at all but plan is to use it for groceries etc. it's not as nice and easy to ride as other fancier ones I read but I think it's pretty great. All kinds of hills here so the ebike is great - it's pretty zippy actually.
