My take on the dice entropy thing.
Unless you arrive at the same result using two different software the "just roll dice bro" recommendation is as fail prone as trusting the Coldcard RNG. In the Coldcard case there was a TRNG but it wasn't being used. What guarantees your dice rolls are not being ignored on your new system of choice?
