As you mention switching to FOSS next time you need to go throught the same ordeal:
I would recommend considering ThunderBird for e-mail and in perculiar the TbSync and EAS-4-TbSync addons to handle connecting tp Exchange mail aervers.
Both academic institutions I work with switched to MicroSoft 365 and these addons have saved me to keep accessing Calendats etc.
