Had fun embracing the #EBTSC this weekend, a blast from my past: Pineapple Upside Down Cake! Used one of the suggested sources, RecipeTinEats, but had fun perusing many on-line versions. After it was in the oven it struck me I might still have a copy of the one I used in the 60’s-70’s (I did!). Not the prettiest, but tasted naughty enough. Subbed cocktail cherries for maraschino, and dark brown sugar which made the whole thing kinda dark.
