Ah didn't realise you had glycerol in there too as I just saw the thumbnail on that experiment and thought I had seen it before . Lots of interesting properties with water as infrared light is meant to increase the exclusion zone charge which is said to make it more gel like. That could be related to this as a more extreme version with obvious the current being charge instead of it coming via infrared. Gerald Pollack has quite a bit information on this.
