idk about Sailfish OS, but used Android (LineageOS) without GMS for a few years, and:
- most things from F-Droid worked fine
- proprietary IMs like DIscord or Telegram worked, but without notifications
- haven't tried any bank apps, loyalty card apps, shopping apps, etc.
