in the US only dead people can be on money so it should be only extinct animals if we switch to animals

Passenger Pigeon -- deliberately hunted to extinction
Carolina Parakeet -- deliberately hunted to extinction
Ivory-billed Woodpecker -- deliberately made extinct by private landowner
Dusky Seaside Sparrow -- deliberately made extinct by NASA
