Hahaha! 😂 To be fair, ‘hairy-fruited eggplant’ literally describes it! It’s hairy, has a fruity flavor, the inside looks like a tomato, and the skin is more like an eggplant. Although… I kinda want to call it a hairy tomaplant. 😂

I have no idea what this fruit is called in English. 😅 In Thai, it’s called มะอึก (má-euk). It’s covered in fuzzy hairs and kind of looks like a tomato and eggplant had a baby.
The flavor is fruity, sour, with just a hint of bitterness—and I loooooove adding it to nam prik (Thai chili dips). It’s also used in some Thai curry pastes or added directly to curries for its unique tangy flavor.
Before using it, you have to scrape or rub off all the fuzzy hairs. It’s a little extra work, but it’s so worth it!

What better way to celebrate than making pizza from scratch?
Here’s my go-to pizza dough recipe — simple, delicious, and perfect for a crispy, chewy homemade pizza night.
Sourdough or Not Pizza Dough Recipe
Makes 2 pizzas 🍕🍕
Ingredients
* 320g bread flour
* 225g water
(add 30–50g more if using yeast instead of sourdough starter)
* 60g sourdough starter
(or 0.5–1g dry yeast)
* 6g salt
* 6g extra virgin olive oil
Instructions
1. Mix
Combine everything until no dry flour remains.
The dough will look rough and shaggy at first — don’t worry, time does the hard work.
2. Rest & Fold
* Rest 30 mins
* Stretch and fold
* Repeat this 3 times total
You’ll see the dough become smoother and stronger after each set.
3. Rise
Divide into 2 dough balls and let them rise until doubled.
You can:
* Bake them the same day, or
* Cold ferment overnight in the fridge for even better flavor.
If refrigerated, let the dough come back to room temperature before baking.
4. Bake
* Heat oven to 250°C
* Stretch the dough however you like
* First bake with just sauce for 7–9 mins
* Add toppings and bake another 5–7 mins until bubbly and golden
And that’s it — homemade pizza with a beautifully light crust, crispy edges, and loads of flavor. 🍕

I’ve been really enjoying baking (and eating 😆) these sweet potato brownies 🤤
They’re pretty guilt-free too—no refined sugar, just natural sweetness from the sweet potatoes and a bit of honey.
They’re definitely different from regular brownies, but as someone with a big sweet tooth, this has been such a great alternative!
Here’s the recipe if you’re interested 😊
Note: I get the best results using Beni Haruka sweet potatoes, but regular orange sweet potatoes work well too. Purple sweet potatoes are okay, but a bit more starchy and not as sweet for my liking.

Sweet Potato Brownies
Ingredients
* 250 g cooked sweet potato (mashed smooth)
* 2 eggs
* 60 g peanut butter (or any nut butter)
* 40 g cocoa powder
* 40–60 g honey (adjust to taste)

* Pinch salt
Optional:
* 40–60 g dark chocolate chips (70%+)
* 1–2 tbsp milk (if batter too thick)

I’d love to share my mango sticky rice recipe—it’s one of my favorite ways to enjoy mango. It’s simple, comforting, and so delicious.
Mango Sticky Rice (Khao Niew Mamuang - ข้าวเหนียวมะม่วง) is a classic Thai dessert made with sticky rice soaked in sweet coconut milk, served with ripe mango and a lightly salted coconut sauce. Creamy, sweet, and just a little savory, it’s especially good when mangoes are in season.

Ingredients
Coconut Sticky Rice
• 250 g glutinous rice
• 150 g coconut milk
• 100 g white sugar
• 5 g sea salt
Coconut Sauce
• 100 g coconut milk
• 10 g white sugar
• ¼ tsp sea salt
• ¾ tsp rice flour
• A few pandan leaves (better to have but not a must)

Instructions
Sticky Rice
1. Rinse the glutinous rice until the water runs clear.
2. Soak the rice for at least 2 hours, up to 12 hours.
3. Drain the rice. If using pandan leaves, tie them into a knot and place them in the steamer with the rice.
4. Steam for 20–30 minutes, until fully cooked. The grains should stick together; if they still fall apart, continue steaming.
Coconut Mixture
5. While the rice is steaming, mix coconut milk, sugar, and salt in a measuring cup until fully dissolved.
6. As soon as the rice is done, pour the coconut mixture over the hot rice (this step is important so the rice absorbs it properly).
7. Mix well, cover, and let rest for at least 30 minutes.
Coconut Sauce
8. Gently heat the coconut milk over low heat to prevent separation. If using pandan leaves, tie them into a knot and place them in the saucepan with coconut milk.
9. In a small bowl, mix sugar, salt, and rice flour until well combined, then add it to the warm coconut milk.
10. Cook gently, stirring, until slightly thickened. Turn off the heat.

This dessert is best served slightly warm. Spoon some sticky rice onto a plate, add fresh mango slices on the side, and serve with coconut sauce poured over or on the side.

I usually make Thai-style crispy pork belly, but this time I tried the Hong Kong style. I think the main difference is that Thai-style has puffier skin and is great for using in other dishes like pad kra pao or noodles. The Hong Kong style has thinner, crispier skin, with juicier meat and more flavor—it’s perfect on its own.
I also made a bok choi dish and some shu mai to give the meal a Cantonese/Hong Kong vibe. Honestly, the shu mai looked really cute one by one… but all together they kind of gave off Halloween vibes 🤣

Finally finished the Thai eggplants today. After making some green curry and giving a few away, I ended up cooking Isan food tonight. Isan cuisine comes from Thailand’s Northeast and is known for its bold, vibrant flavors.
I made a mashed eggplant chili dip (ซุปมะเขือ) and enjoyed it with some veggies and boiled eggs. To make the meal more filling, I added some steak with nam jim jaew, and a spicy, sour chicken soup on the side to keep everything bright and comforting.
Simple but bold. Light, yet filling.

I added some dark rye, wheat germ, and psyllium husks to the dough for a little extra fiber. I expected it to be denser, but the crumb turned out really nice—light and chewy. The crust is thin and crispy too.
My husband smeared a generous amount of butter on a thick slice, added a drizzle of honey, and a pinch of salt… chef’s kiss! 💋

Moo Krob 🐖 crispy pork belly with nam jim jaew and nam jim seafood.
Nam jim seafood is a bright, spicy Thai dipping sauce usually served with seafood.
It’s punchy and fresh, with lime, chili, garlic, and herbs.
I know it sounds a bit odd to pair a seafood sauce with rich, crispy pork belly… but trust me, it’s soooo good together! The freshness cuts through the richness perfectly 😋

After enjoying the jackfruit, I saved the seeds to make เม็ดขนุน (Med Kanun), one of the traditional Thai auspicious desserts (ขนมไทยมงคล).
These sweets are often made to represent good luck, prosperity, and positive blessings.
Med Kanun is said to symbolize support, encouragement, and being well-supported in life, a meaning I find really lovely 😊
My afternoon tea today is a little different, but I know it’s going to be delicious 🍵💛

Using some of the tomatoes to make nam prik ong (น้ำพริกอ่อง) — a Northern Thai chili dip with tomatoes and minced pork. 🍅

Quite a feast today! My parents came to visit and brought us a big jackfruit from their garden—sweet, juicy, and definitely a bit of work to get into.
I also picked up some plum mangoes - Maprang (มะปราง) from a local farmer since they’re in season. They only come around once a year, so I’m making the most of it.

A productive Monday morning for me. We had our first rain in months last night, so everything feels refreshed and the weather has cooled down a bit.
Finished baking a loaf of classic #sourdough bread, then popped some granola into the oven right after. At the same time, the fruit box was ready. Papaya is one of my husband’s favorites, and this one is especially delicious—sweet, juicy, soft yet firm. It’s also great in smoothies and makes them extra creamy🍦

I’m not sure what went wrong when I uploaded the recipe—it didn’t include the full instructions. I’ve tried to fix it a few times, but it still doesn’t show the whole recipe. So here they are! The simplest focaccia recipe. 🧡🫧
Focaccia for All
(Sourdough or Dry Yeast)
Ingredients
• 320 g bread flour
• 225 g water (add ~30–50 g more if baking without sourdough)
• 60 g sourdough starter (or 0.5–1 g dry yeast for non-sourdough)
• 6 g salt
• 6 g extra-virgin olive oil

Instructions
1. Mix all ingredients together until combined. The dough will look shaggy — that’s perfectly fine. Time will do the work for you.
2. Rest for 30 minutes (Set #1).
3. Stretch and fold the dough.
4. Rest for another 30 minutes (Set #2), then stretch and fold again.
5. Rest for 30 minutes (Set #3), then stretch and fold once more.
6. Once the dough looks smooth and elastic, it’s ready to use.
Alternatively, refrigerate overnight to develop more complex flavor.
7. When you’re ready to bake, gently transfer the dough into a well-oiled pan (see Notes).
8. Let the dough rise until it looks light, puffy, and full of visible bubbles.(see Notes).
9. Near the end of the rise, preheat the oven to 200°C (390°F).
10. When the dough is ready, generously drizzle with olive oil. Dimple the surface with your fingers and add any herbs or toppings you like.
11. Bake at 200°C for 20–25 minutes, or until golden brown.
12. Let cool for at least 10 minutes before serving.

• I use a 6×6-inch metal square pan, but a 9×5-inch loaf pan also works (you’ll need two).
• In warm weather, fermentation usually takes 3–4 hours.
• Be generous with the olive oil — it’s key to great focaccia flavor and texture.

I got a bunch of oyster mushrooms from my neighbor, so I turned them into nam prik — a Thai chili dip made with roasted ingredients and herbs.
I’m having it with pan-seared mackerel, boiled eggs, and cucumber. To make the meal a bit more substantial, I also made some steak with nam jim jaew, a spicy-tangy Thai dipping sauce. Light but filling, and full of flavor!
