I think I've cracked it...
Ingredients for 3 x 280g NY style pizza (better for home oven)
Note: Just remove oil and sugar for a high heat Neapolitan pizza
00 Flour 495g
Caputo dry Yeast 3.5g
Sugar 5g
Salt 10g
Olive Oil 15g
Water 320g
--------------------------------------------
BLOOM STAGE
In jug, Warm Water + yeast
Mix and bloom to check it's alive
--------------------------------------------
SHAGGY STAGE
In large bowl, add Flour + salt + sugar. Mix.
Add oil to jug, then add jug to dry mix.
Let it rest in covered bowl for 15-30m
--------------------------------------------
BULK FERMENT STAGE
Then knead on counter (find warm place)
Back in bowl, cover and rest for 15 mins.
Stretch every 15 minutes in bowl (pull a corner) to develop criss cross gluten strands
Repeat this three times - bowl will have been on the counter for 60 mins total.
Put in fridge overnight

BALL FERMENT STAGE
Next morning - take out fridge and lightly flour countertop.
Cut and shape into three equal balls
Lightly oil and put in lightly oiled sealed container(s)
Let sit at room temp until ready to cook that evening.
