Homemade Glass-Canned Tomato Sauce from Greenhouse to Jar 🍅
Transform your garden tomatoes into shelf-stable sauce that'll last all winter! Here's how:
Step-by-Step Guide
1. Harvest & Prep
- Pick 5-7 kg of ripe tomatoes
- Wash thoroughly, remove stems and any blemishes
2. Peeling is optional. You can boil your tomatoes and remove the peel
3. Crush & Cook
- Quarter tomatoes, remove seeds if desired
- Simmer in heavy-bottomed pot for 45-60 minutes
- Season with salt, herbs (basil, oregano), garlic if desired
- Use a mixer or food processor to make your tomato sauce creamier.
4. Sterilize Jars
- Boil glass canning jars and lids for 10 minutes
- Keep hot until ready to fill
5. Fill & Seal
- Ladle hot sauce into hot jars, leaving ¼ inch headspace
- Wipe rim clean, apply lid and ring finger-tight
6. Pasteurization process
- Process jars in boiling water bath for 45 minutes
- Start timing when water returns to full boil
- Remove and cool on towel
Pro tip: Label with date - properly canned sauce keeps 1-2 years in cool, dark place. Nothing beats the taste of summer captured in a jar! 🌱

J'ai pris mon 1er ride ce mois-ci, l'expérience utilisateur est bluffante. A San Francisco, les locaux ont complétement normalisé son utilisation. Ce n'est plus du tout un gadget, ça marche et les économies réalisées du fait de l'absence de chauffeur font que le succès de ce modèle est inévitable.
Un tel essai à grande échelle en France est inimaginable du fait des contraintes réglementaires.

France is a mosaic of "pays": over the last 230 years, central planners have made every effort to standardise a country whose diversity is one of its greatest assets. In its long history, France as always been a collection of people. Since time immemorial, its inhabitants identified themselves by their "pays", the place from which most of them rarely left.
In its great essay "The Discovery of France", British writer Graham Robb perfectly describes it:
"The basic division was the pagus, the area controlled by a tribe. Two thousand years after the conquest of Gaul, the pays (pronounced pay-ee) was still a recognizable reality. The word pays – usually translated as 'country' – referred, not to the abstract nation, but to the tangible, ancestral region that people thought of as their home. A pays was the area in which everything was familiar: the sound of the human voice, the orchestra of birds and insects, the choreography of winds and the mysterious configurations of trees, rocks and magic wells."
Despite this systematic effort to destroy territorial memory, people continue to refer to their "pays" in everyday language, as it makes much more sense than using soulless administrative divisions.
