They could sequence the bacteria to find out which genes they have or they can culture the bacteria and test a panel of antibiotics against them, which is more old fashioned and a bit slower, but also works. You pick or buy them when they have turned orange, but are still hard, but it’s super important that you wait until they are a gloppy mess before eating them. Otherwise, you will never eat another persimmon - Hachiya persimmons are extremely astringent until they are goopy. I eat one by slicing it in quarters, spreading them, and spooning the pulp out of the skin. We use the pulp as a sauce on our fruit salad or as a desert mixed with plain yogurt. They are extremely sweet. Those are Japanese persimmons. They usually lack seeds. Suppose one infection causes a 10% chance, then 2 infections cause a 20% chance because having two infections gives you twice the risk. It’s NOT that the second infection itself has twice the risk.
