Break down of the arbitrage side hustle. *** aka*** Selling corn on P2P platforms and buying on centralized exchanges.
% Over market shows the premium of each offer.
One deal lost money due to the buyer choosing a wrong payment method and while fiat was on the way the price moved higher. The solution to this would be to hold fiat on an exchange and buy bitcoin right away. Obviously increases the risk of a rug.
At a current price the profit is slightly above 6%. It is possible to maximize it buy batching purchases/withdrawals on an exchange. In this example instant payment methods were used and coin withdrawn on-chain or lightning right away (minimum rug exposure to CEX). In addition majority of deals were on-chain, hence higher fees.
This hobby project drains liquidity from Coinbases of the world, puts BTC in self custody, provides liquidity to P2P platforms and earns a little coin.

Serious talk now.
If you want a side project to accumulate more sats, increase self custody and drain centralized exchanges I have a gig for you.
Get a Revolut app, Coinbase and Hodl Hodl accounts (those are just examples, but other fintech apps, centralized (CEX) and 2pp exchanges will work).
Sell bitcoin over the market price (3-5%) on P2P exchange, transfer fiat to CEX, buy more bitcoin.
The spread between 2P2 and CEX is real. The arbitrage is working, it's been done by me and others.
You could even hold some fiat on CEX (obviously amount your are willing to lose), in order to hedge against a sudden price increase. So when you start a p2p trade you could buy bitcoin already, this way if it takes time for fiat to arrive, you already fixed the price.
