I don't have it in me to manage a big garden, 5 gallon buckets are an easy alternative to raised beds.

Yep, it's got hummus as the "sauce" much tasty. If my eggplant was ripe, it would've gone on them.

I use naan, but any sort of flatbread works. Spread some hummus on it and top it with any veggies you like, I used tomatoes, bell peppers, broccoli (steam it a bit), and purple onion or shallot. It's supposed to be a rainbow of colors but do what you want. Top it with mozzarella cheese and bake for 10-15 minutes, the veggies will soften a bit you can always sautee everything a little if you want it softer.

I'm doing one worse and going to make veggie pizzas 😂. I guess technically they're pizza adjacent, but it's bread (naan) with toppings (veggies and mozzarella) and sauce (hummus) 🤷♀️
