Avocado oil can work but just be aware that unrefined avo oil has a lower smoke point.
And yea it's fair to be scared it's terrifying I scream at least once each time I do it, sometimes before you get experience with how hot oil behaves you'll get to that smoke point and it's freaky! Wear long sleeves and use long tongs it'll help you not get burned.
As a teenager I almost burned my friends family home down because we decided to do a fry up and try fried Snickers bars. We brought the smoking pot of oil outside and it was raining so chaos ensued 😂
But honestly just woman up, it's so much better than any fried food you can get anywhere else. You'll fall in love with what you're capable of creating 🥰
