Im on p100s but Im using vgpu in other vms so I only have about 14gb available with overhead that drops down to like ~12 usable so I can't touch that much context.
How are you getting that much context in 16gb of vram? The model is larger than that. I assume it has to be using layers in system memory?

I don't think the issue has ever been about "seeing the balance", or about watching the public zaps going around within Nostr. As you quite rightly said, zaps are about being transparent about the fact that person A zapped person B an amount X
The privacy challenge arises when people try to swap in and out of Nostr, that's where the tracking fears start. Following the money within Nostr was never the issue; the issue arises when try to take the money out of Nostr, like using your on-chain Nostr zaps to make a non-Nostr payment

I have a theory that this would be beneficial beyond the privacy conscious. Money as social signal gets to be really weird and uncomfortable for people who don't have much of an expendable budget.
Even if you have the option, you have to rely on the server respecting that option. They are free to just ignore it and publish anyway.
