That option would be more if you already had multiple Hypervisors running in a cluster. If your cluster had full HA then you could usually rely on hardware HA to handle fault tollerance for you. If you had multiple machines _not_ in a cluster, you could rely on multiple running instances of opensense on each machine in a software HA.
It's been a while since i've used pfsense, they may also support software HA.

10Gb switch 2.5gb firewall. You firewall _should_ really only need a single port. Switch does the rest.
Consider going virtual, although that's kind of the elite tier. If your virtualization setup is robust and redundant enough to be hardware fault tolerant then I would suggest just going virtual.
Opensense offers software-based high availability as well, so if you didn't have good hardware HA you could achieve decent HA on your firewall with opensense.
I used to run a dell optiplex core2quad setup that hogged over 150w loaded and couldn't handle a 100mb stream with vpn encryption. The most important part is that you have high quality intel or broadcom NICs with good driver support. This is because most networking (especially routing) can be handled by the interface itself without interrupting the processor. Cheap realtek and non-optimized drivers add latency and hog the processor to do IO. You'll see this reflected in used kernel time.
An appliance often offers the best stability and support like others have mentioned.
